  • ¾ cup stone ground cornmeal (medium or fine grind)
  • ¼ cup all purpose flour
  • ½ teaspoon soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  1. Preheat oven to 400. Thoroughly grease (with oil, lard or bacon grease) a 9” cast iron skillet, or heavy baking pan and put in the oven to preheat. Preheating the pan is optional but it creates a crisper bottom, if you like that.
  2. Mix all dry ingredients and make a well in the middle.
  3. Whisk together the egg and buttermilk, pour into the well & mix.
  4. Sprinkle a little paprika on top.
  5. Bake for about 25 minutes or until brown
One excellent pan greaser is leftover duck fat. I have a glass jar of it in the freezer and it's good for many things, this being one of them. You may also use chicken fat, goose fat or bacon fat.

Another way to make it is Texas style with kernels from an ear of corn, a couple of tablespoons each of diced onion, hatch chilis and bell pepper.
