Southern Spoonbread

March 17, 2025 By Carine Clary Leave a Comment

What’s Southern Spoonbread? It’s the lighter eggier version of the more solid and reliable cornbread. It’s almost a vegetable, but one your kids will like as much as I did on a visit to Kentucky where I first tasted it. It’s quick and easy so let’s get started. For the Prep You will start by…

Carrot Pumpkin Cake

Carrot Pumpkin Cake

December 2, 2024 By Carine Clary Leave a Comment

I love one-layer cakes and a spicy Carrot Pumpkin Cake….what could go wrong? Ok, you could burn it or drop it upside down on a dirty kitchen floor (and really, is there any other kind of kitchen floor?) but otherwise, this cake is a quick to make winner. And it does not need to be…

Pastitsio

February 16, 2023 By Carine Clary 4 Comments

Classic Greek Pastitsio for anyone who wants a meaty layered casserole with a savory twist. The meat can be ground beef or lamb (with an addition of pork for flavor and juiciness) and it’s cooked with onions, garlic, oregano, and a pinch of cinnamon. Add a can of fire-roasted tomatoes, some red balsamic vinegar, pour…

Italian Grilled Cheese Sandwich

Italian Grilled Cheese Sandwich

August 18, 2022 By Carine Clary Leave a Comment

Italian Grilled Cheese Sandwich. What is this exactly? It’s grilled and it’s got cheese but that’s where the similarity to the old diner style grilled cheese ends. Grilled in olive oil and stuffed with your choice of cotto salami, prosciutto, or both with a meltingly soft slab of fontina and you’re ready to bite in…

About Me

Hello, I'm Carine Clary and I'm the FrangloSaxon.

And is that a word? In a word - Yes! It reflects my French connections in the south part of the state and the Anglo Saxon ones on the Arkansas state line. I grew up eating & loving all the foods of Louisiana and the idea is to collect lots of them right here on this website.

What you'll find here is food that reflects everybody's cooking. Creole we know. Cajun we know. But how about Croatian or Vietnamese....or Italian or German....or the underestimated plain Southern food they do so well in the upstate parishes?

They're all part of who we are so pull up your chair and join me for some good eats!

Turkey Poulette

Back in the eighties they made a TV movie about a post-apocalyptic world. You think you’ll never eat again but by the next afternoon familiar hunger pangs kick in and you’re headed…

Slugburger

Slugburger! Ok, the first thing to establish is the meaning of ‘slug.’ No relation to slimy members of the phylum Mollusca. This delicious burger was ginned up during the Great Depression when it sold for a slug, aka, a nickel. Now that we’ve gotten that out of the way let’s get on with the prep of…
